- Corb fish tartar, raw prawn with fines herbs and sautéed vegetable timbale and orange honey
- Large ravioli filled cottage cheese and swiss chard flavoured with butter and truffle sauce
- Baked amberjack escalope with lettuce sauce and fresh sea food
- Mint jelly with water ice tangerine
- Pan fried veal fillet with “lardo di Colonnata” and sautéed artichoke
