Bits of history
Inaugurated in 1757, the Ristorante del Cambio offers the rich but delicate flavours of old Piedmont, a skilful blend of traditional and creative.
One of the city’s historic jewels, it welcomes its guests with crimson velvets, baroque mirrors topped by the paintings of Roberto Bonelli and a triumph of gilded woods.
The largest room still has the table where Count Camillo Benso di Cavour used to sit, the Cambio’s most faithful and illustrious patron. This historic restaurant was in fact the meeting place of the leading politicians, aristocrats and cultural figures of Piedmont and of the Kingdom of Italy.
Today the Ristorante del Cambio is a very special place, not only for its historic renown but for the style of its hospitality and its masterful cuisine, ingredients that have enabled it to become part of the Associazione Locali Storici d’Italia.
