THE ORIGINS Native to Monferrato, the dish was initially a way of using chicken giblets and veal organs discarded during the meat selection and cleaning process.

BAPTISM OF HONOUR Originated as a peasant recipe, it has been elevated to an elite dish, taking its name from the ceremonial jacket worn by Piedmontese finance officials. In the current version, a mainstay of the Cambio’s menu, crests, hailstones and chicken livers and veal sweetbreads, spinal marrow and brains are cooked with mushrooms in oil, butter, Marsala, Barolo wine and vinegar and served accompanied by fried semolina.
