A “CARTE” FAITHFUL TO TRADITION
BEYOND FASHION Notwithstanding the ephemerous pleasures of nouvelle cuisine, the menus of the Cambio retain the robustness typical of nineteenth-century fare, updated to suit modern tastes and refined with the skilful touches of the chef.
THE “GRANDE CARTE” jealously defends glorious dishes that have made the history of Piedmontese cuisine, like agnolotti, the mixed fry, the ever-popular braised veal and an exclusive interpretation of “batsuà”, an elaborate recipe for connoisseurs only: boned pig’s feet, boiled in water and vinegar, then placed in an earthenware dish and lightly browned with the accompaniment of typical sauces, “bagnet verd e röss”.
