Rack of lamb in a crust of grana padano cheese and pickled pears

Ingredients for 4 persons:

  • lamb racks 2
  • pickled Martin Sec pears 4
  • egg 1
  • grated grana padano cheese 150 g
  • lamb demi-glace sauce with red wine as desired
  • extra virgin olive oil
  • salt and pepper

Carefully salt the lamb racks and brown them in a frying pan in extra virgin olive oil, at least three minutes per side. Set on a rack to rest for ten minutes. Dip in the beaten egg and the grated grana cheese, then brown for a few minutes on all sides in a hot, non-stick frying pan with a little oil.

Return to the rack and bake at 160° C for 5 min. Cut in thick slices and serve with the hot demi-glace sauce, the Martin Sec pears and braised vegetables as desired.
